4 Days 3 Nights
Four days is enough to cover Kathmandu and Pokhara without feeling rushed, as long as the time gets split the right way. This route gives Pokhara the bulk of it, since the lake and the mountains around it are worth more than a passing glance, while Kathmandu still gets a proper look on either end of the trip. One city, one lake town, no wasted driving days in between.

The Kathmandu to Pokhara drive runs about six to seven hours, so that leg takes up most of a day. A domestic flight cuts it down to thirty minutes if the schedule feels tight, and it's worth adding if you'd rather spend the saved time in Pokhara. Sarangkot sunrise depends entirely on a clear sky, so check the forecast the night before.
Pickup at the airport, then straight to the hotel. If there's time and energy left, a short visit to Swayambhunath fits in before evening or you can explore the beautiful Thamel by walk.
Drive west, hills most of the way. Check in once you arrive, then head down to Phewa Lake for the evening light.
Early start for Sarangkot and sunrise over the Annapurnas. Slower after that: Devi's Falls, the cave beneath it, and the World Peace Pagoda across the lake.
Drive back east, arriving in Kathmandu with time to freshen up before your flight out.
